Ingredients:
160g of busiate pasta
100g of fresh ricotta
3 tablespoons of extra virgin olive oil (recommended Saff bio)
4 tablespoons of pistachio pesto
Method
(1) Bring water to the boil in a pot. Add some coarse ground salt and toss in busiate pasta
(2) When busiate pasta is ready, dry it "al dente"
(3) In a frying pan, set heat to medium, add extra virgin olive oil and half the pistachio pesto jar then toss in the busiate pasta.
(4) Stir the pasta a few times then add the ricotta cheese and let it melt.
Serve hot with some pistachios on top and you are ready to go
